If you wish to obtain the perfect pizza base, you should leave the dough sit for at least 8 hours, preferably the whole night.
You can obtain the best pizza dough using wheat flour with a high amount of gluten. This will provide the dough with more elasticity. I recommend type 0 Manitoba flour, which contains up to 15% gluten.

Compact equipment for any restaurant
Pizza is one of the most popular foods in the world, so it’s always a good idea to offer a couple of variations. Unfortunately, pizza ovens are often quite large and won’t fit into every restaurant kitchen. The undeniable advantage of the Royal Catering pizza oven is the combination of efficiency with compact proportions. Thanks to its size, the oven fits perfectly even into small kitchens or in food trucks. The chamotte ceramic slabs provide excellent heat retention and distribution. I would recommend this product to anyone who’d like to put pizza or similar dishes on their menu.
